Roasted Sweet Potato Slices

Ingredients

  • 2 medium to large sweet potatoes (choose sweet potatoes that are an even thickness through the middle.)
  • 1/4 cup chipolte olive oil (or use regular olive oil plus 1/2 tsp cayenne pepper or a dash of Tobasco sauce)
  • Good sprinkle cinnamon

Directions

Preheat the oven to 375 deg. F.
Wash and peel the sweet potatoes. Slice them into rounds about 1/2" (1.2 cm) wide. Put them in a bowl and add the chipolte olive oil. Mix thoroughly and then lift out the sweet potato slices and place them on a raised edge cookie sheet lined in parchment paper (or foil).
Sprinkle them with cinnamon and freshly ground pepper. Bake about 20 - 25 minutes or until done, turning the slices every 8 minutes or so.
