Zucchini Tomato Pepper Stir Fry

Ingredients
- 1 Tbsp olive oil
- 1 - 2 zucchini (cut into bite sized pieces)
- 1 clove garlic (minced)
- 1/4 Tsp dried oregano
- 1/4 Tsp salt
- 1/8 Tsp hot pepper flakes
- 1 Pint cherry or grape tomatoes (cut in half)
- 1 red or yellow or green sweet pepper (cut into bite sized pieces)
- pinch white sugar
- 1 Tbsp chopped fresh basil
- 2 Tsp red wine vinegar
Directions
| Heat oil over medium heat in a frying pan. Sauté zucchini, garlic, pepper, oregano, salt and hot pepper flakes until just softened. Add tomatoes and sugar; cook until tomatoes are starting to shrivel. Stir in fresh basil and vinegar. | |
