Ah, the Farmers’ Market has lovely fresh peas, but they are a little pricey! I managed to get to the market near the end of the day and the farmer sold me 3 quarts of unshelled peas, for what I would normally pay for one quart.
Three quarts of peas, when shelled, will make enough for a nice serving of New Peas with Butter and Chives for 4 or 5 people.
The peas are barely cooked for three minutes and then mixed with the butter and topped with chives. The flavour is fresh and amazing.
New Peas with Butter and Chives

Ingredients
- 2 Tbsp butter
- 1 Tbsp fresh chopped chives
- 3 Quarts (litres) unshelled new peas
Directions
| Shell the peas. Bring a pot of water to boil. Add the peas. Boil 3 minutes. Drain and add to a serving dish. Add the butter and stir to melt the butter. Top with fresh chopped chives. | |
