Apple Cheese Cake

Ingredients
Base
- 1/2 cup soft butter
- 1/3 cup white sugar
- 1/4 Tsp vanilla extract
- 1 cup all purpose flour
- 1/4 cup raspberry jam (or your favourite fruit jam)
Cream Cheese Layer
- 1 250 gm (8 oz) pkg plain cream cheese (room temperature (or soften in the microwave - 1 minute at low power should do)
- 1/4 cup white sugar
- 1 Large egg
- 1/2 Tsp vanilla extract
Topping
- 1/3 cup white sugar
- 1/2 Tsp ground cinnamon
- 4 Cups apples (very thinly sliced)
Directions

Base cream together the butter, sugar and vanilla. Add flour and spread on base and up the sides of a 9" springform pan.  | |

Spread raspberry jam over the base.  | |
| Cream Cheese Layer | |
| Blend the cream cheese (which is at room temp), sugar, egg and vanilla. Carefully spread over the raspberry jam. | |
| Topping | |

Mix the sugar and cinnamon. Using a mandolin or knife slice the apples paper thin.  | |

Toss the sugar/cinnamon mixture together with the sliced apples. Spread over the cream cheese layer.  | |

Bake at 375 deg F for 30 - 35 minutes or until apples are cooked and the cream cheese layer has puffed a bit.  | |
