Peel and dice the sweet potatoes |

In a pot, heat butter on medium heat. Add onion, carrot and celery and sauté for 1 minute. Add sweet potatoes, pear and thyme and sauté for about 2 minutes. |

Add paprika, chicken broth, salt and water. Bring to a boil and simmer for 15 minutes or until sweet potato is soft. |

Puree in blender or food processor in batches until smooth. If you are using a blender, do not fill the blender more than half full and put your hand on the top to hold it on. If it is too full and you start to blend it, the top can be pushed off and hot soup everywhere! |

Return to pot. Add cream, maple syrup and lime juice. Simmer for 5 minutes. Season to taste with salt and pepper adding more syrup or lime juice as needed.
