Saute of Pork Hongroise

Ingredients
- 500 Gm (1.25 lb) 1 or 2 pork tenderloins
- 1 Tbsp butter
- 1 Tbsp olive oil
- salt and pepper to taste
- 1/4 cup diced onion or 2 shallots diced
- 2 Tsp paprika
- 2 Tsp all purpose flour
- 1/3 cup dry sherry
- 1/2 cup unsalted beef broth
- 3/4 cups sliced cremini or white mushrooms (or may use button mushrooms)
- 4 Tbsp half and half cream
