Heat oven to 350 °F . This recipe will make an oblong (13x9x2 inch) or two 9-inch or three 8-inch round layer pans or 30 cup cakes.
If using layer pans, trace the base of the pan on wax paper and line the base of the pan. Then grease the pan base and sides with butter. |

Measure all ingredients into a large mixing bowl. Blend ½ minute on low speed, scraping bowl constantly. Beat 3 minutes at high speed, scraping bowl occasionally. |

Pour into pans. Bake oblong 45-50 minutes, layers 35-40 minutes, cupcakes 25-30 minutes or until cake tester comes out clean.

Cool on racks. This recipe makes two large layers.Split the layers in half, to make a four tiered cake.

Prepare a double recipe of Basic Buttercream Frosting.
In between the first two and last two layers, spread a thin layer of icing. In the middle, spread a thin layer of frosting and a bananas sliced very thin.
Frost the top and sides of the cake with the remaining frosting. |
