Carrot Brownies

Inspiration Grammy's Recipe

Ingredients

  • 1/4 Cup plus 2 tbsp butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 Tsp vanilla
  • 1 cup all purpose flour
  • 1 Tsp baking powder
  • 3/4 cups grated carrots
  • 1/4 cup raisins

Orange Icing

  • 1 1/2 Cups icing sugar
  • 1 Tsp vanilla
  • 1 Tbsp grated orange peel
  • JE* (just enough) orange juice

Directions

Grease 8 inch square pyrex dish. Preheat oven 350 °F .
Melt the butter in a bowl in the microwave (alternatively you can melt it in a saucepan on the stove). Stir in sugar, add egg and vanilla. Stir until well blended. Stir in flour and baking powder. Fold in carrots and raisins. Spread batter evenly in pan.

Bake 20-25 min Do not over bake. Ice when warm with orange icing

Orange Icing
Mix 1 ½ tbsp of soft butter with 1 ½ cups of icing sugar. Add 1 tsp vanilla, 1 tbsp of grated orange peel. Add enough orange juice to make a nice consistency.
