Spinach, Artichoke and Mozzarella Flan

Ingredients
- 1 Tbsp butter
- 2 Medium red or white cooking onions (medium chop)
- pinch salt
- 1/4 Tsp crumbled dried tarragon (or 2 tbsp minced fresh tarragon)
- freshly ground pepper to taste
- 1 Jar (6 oz/170 ml) marinated artichoke hearts
- 5 Cups fresh spinach (washed, stems removed)
- 3/4 cups shredded mozzarella cheese
- 2 Large eggs
- dash Tobasco or your favourite hot sauce
- freshly grated Parmesan cheese
