Popover Pizza

Popovers are the American version of Yorkshire puddings.  A popover is a light, hollow roll made from an egg batter.

Popover Pizza is a quick and easy dish where the bottom crust for the pizza is a golden popover on top.

Popover Pizza is shown here with Marinated Mixed Vegetable Salad (tomorrow’s recipe!)  Very nice the first day, leftover Popover Pizza makes for great lunches.

Popover Pizza

Ingredients

  • 1 Lb or 454 gm lean ground beef
  • 1 onion (chopped)
  • 2 Cloves garlic (minced)
  • 1 Tbsp olive oil
  • 1 Tsp dried basil (or 1 tbsp of fresh chopped basil)
  • 1/8 Tsp cayenne pepper
  • 1 Tsp dried oregano
  • 1 14 oz (398 ml) tin Italian style chopped tomatoes (unsalted)
  • 1/2 Tsp salt
  • 1 cup grated Mozzarella or a mixture of Italian grated cheese
  • 1/2 cup Parmesan cheese (freshly grated is best)

Popover Batter

  • 2 eggs
  • 1 cup milk
  • 1 Tbsp olive oil
  • 1 cup all purpose flour
  • 1/2 Tsp salt

Directions

Popover Batter
Mix eggs and milk and oil until foamy; add flour and salt and mix until batter is smooth. Let it sit for 10 minutes to allow the flour to swell.
Brown beef, onion and garlic. Drain off any fat. Add the tomatoes, 1 tbsp of olive oil, basil, oregano, cayenne, salt and freshly grated pepper. Cook 10 minutes. Put in a 9 x 13 glass baking pan. Pour the batter on top of the hot mixture. On top of batter sprinkle the Parmesan cheese and then then the Mozzarella cheese.

Bake in a 400 °F oven for 30 minutes. Let sit for 5 minutes and cut into squares.
