Overnight Blueberry French Toast

Overnight Blueberry French Toast is the perfect Victoria Day weekend breakfast for a gang.

Like many stratas, you make it up the night before and then bake it in the morning.  Add a plate of fresh fruit and some sausages or bacon and you have a stellar start to the day.

Overnight Blueberry French Toast

Serves 8

Ingredients

  • 1 1/2 Cups brown sugar
  • 1 1/4 Tsp ground cinnamon
  • 1/4 cup butter (melted)
  • 16 Slices white bread (crusts removed)
  • 2 Cups fresh blueberries (cultivated or wild or combination)
  • 5 eggs
  • 1 1/2 Cups milk
  • 1/2 Tsp salt

Directions

Combine brown sugar, cinnamon, and melted butter. Mix well. Sprinkle ⅓ of mixture evenly in bottom of a 9 x 13 (23 cm x 33 cm) pan. cover with 8 slices of bread. Sprinkle another ⅓ of sugar mixture over bread and scatter berries on top.
Overnight Blueberry French Toast
Place remaining bread on fruit. Sprinkle with remaining sugar mixture. Beat eggs, milk, and salt together. Pour evenly over bread. Press down lightly. cover with plastic wrap and refrigerate overnight, or let stand at room temperature for 2 hours.

Bake, uncovered, at 350 °F for 40 - 45 min, or until puffed and golden. Serve warm with maple syrup. Makes 8 servings
Overnight Blueberry French Toast
For a tasty variation, substitute raspberries, apples or peaches for the blueberries when they are in season. Try using raisin bread or egg bread.
