Well, Easter is just a week or so away and I think you need to be prepared to use leftovers from company dinners in creative ways.

The ability to bake a good batch of golden brown biscuits is always the test of a good cook.

These Potato Biscuits have as their base, leftover mashed potatoes.  If you had happen to make Garlic Mashed Potatoes, then you would make Garlic Potato Biscuits.

These moist biscuits will go with just about any dinner and are surprisingly tasty in the morning with some butter or jam.

Potato Biscuits

Serves 12 -14

Ingredients

  • 1 - 1 1/4 Cups leftover mashed potatoes
  • 1/4 cup milk
  • 1 cup all purpose flour
  • 3 Tsp baking powder
  • 1/4 Tsp salt (depending on how salted the mash potatoes are)
  • 1 egg (beaten)

Directions

Mix together the flour, salt and baking powder. Add this mixture to a mixing bowl containing the mashed potatoes. Stir together (mixture will be a bit crumbly).
Mix the beaten egg with the milk and then add this into the potato mixture. Mix to a soft dough. Turn on to a lfoured surface and knead 4 or 5 times. (To knead, sprinkle the top of the dough with flour and then lift the bottom half of the dough onto the top half, while pushing in with the heals of your hands).
Roll or pat out to a 3/4 inch thickness and cut into rounds using a 2 1/2 inch floured cutter. Mix the leftover pieces together and roll out again, until all the dough has been used up.

Place on an un-greased cookie sheet. Bake in a 400 deg F oven for 20 minutes or until lightly browned.
