As the weather turns warm, the strawberry season is ending, but it has been glorious.
Strawberry Muffins are oat based muffins that are made with crushed berries. They are perfect at this time of year, when strawberries are fresh and delicious. You can also freeze strawberries and enjoy the same fresh flavour later in the year.
You can enjoy even more of the strawberry flavour when you serve Strawberry Muffins with Strawberry Butter.
Strawberry Butter is a nice light topping for toast, teas breads, scones or biscuits, but is especially good when served with these Strawberry Muffins.

- 2 Cups all purpose flour
- 1 1/2 Cups rolled oats
- 1 Tsp ground cinnamon
- 1 Tsp salt
- 1 Tsp baking soda
- 1/2 Tsp baking powder
- 3 Large eggs
- 1 cup white sugar
- 1 cup vegetable oil
- 1 Tsp vanilla extract
- 2 Cups crushed strawberries (about 4 cups of whole berries)
