Apple Coffee Cake

Ingredients

  • 1/3 cup soft butter
  • 1 cup white sugar
  • 2 Large eggs
  • 1 1/2 Cups all purpose flour
  • 1 1/2 Tsp baking powder
  • 3/4 Tsp salt
  • 1 cup dairy sour cream
  • 1/2 Tsp baking soda

Topping

  • 1 Medium sized apple
  • 1 Tbsp lemon juice
  • 1/3 cup brown sugar
  • 3/4 Tsp ground cinnamon

Directions

Cream the butter with an electric mixture. Gradually add the white sugar, beating well. Beat in the eggs.

Stir flour, baking powder and salt together. Combine baking soda with sour cream. Add the sour cream mixture to the batter alternately with the flour mixture, beating well after each addition.
Pour the batter into a greased 8 inch square glass baking pan.

Topping
Wash and core the apple, but do not peel. Slice the apple very thin and sprinkle with lemon juice. Combine the brown sugar and cinnamon.

Sprinkle the cake with 1/3 of the brown sugar/ cinnamon mixture. Place apple slices on top.

Cover the apple slices with the rest of the brown sugar/cinnamon mixture.
Apple Coffee Cake - top with the rest of the cinnamon mixture
Bake in a 325 deg F oven for 50 to 60 minutes or until it is just cooked and a cake tester inserted comes out clean.
