4 medium to small apples (I prefer MacIntosh, but you can choose your favourite cooking apple)
1 - 1 1/2 Tbsp brown sugar
JE* (just enough) cinnamon to taste
Directions
Peel and core the apples and then cut into bite sized pieces. Sprinkle with cinnamon (to taste....I like a fair amount of cinnamon). Add the brown sugar and stir.
Put on a burner that is on simmer, cover and cook about 20 - 30 minutes (depending on the apples), stirring every 5 minutes or so, until the apples are soft and can be broken down with a fork.
