Clementine and Almond Salad
Ingredients
- 1 can clementine or mandarin oranges or 2 fresh clementines, peeled and the sections cut in half
- 1/4 cup toasted almonds or pine nuts (toast in dry frying pan on stove until lightly toasted)
- 1 Bunch of romaine lettuce and 1 head of other lettuce or just use mixed greens
Optional
- 1 - 2 Pieces prociutto (fried and crisped)
Salad dressing
- 6 Tbsp olive oil
- 2 Tbsp white wine vinegar
- 1 Tbsp lemon juice
- 1 Tbsp maple syrup or 1 tsp of sugar
- 1/2 Tsp salt
- 1 Tsp favourite good mustard or 1/2 tsp dry mustard
- 1 Clove garlic, minced
