Old Fashioned Raisin Spice Cake

Ingredients
Cake
- 2 egg whites
- 1 1/3 Cups all purpose flour
- 1 1/2 Tsp baking powder
- 1/2 Tsp salt
- 2 Tsp cinnamon
- 1 Tsp ground allspice
- 1/2 Tsp ground cloves
- 1/2 cup butter (softened to room temperature)
- 1 cup white sugar
- 2 egg yolks
- 2/3 cups milk
- 1 Tsp vanilla extract
- 3/4 cups raisins (which have been soaked in hot water for 5 minutes and then drained)
Frosting
- 1/4 cup butter (softened to room temperature)
- 2 Cups icing sugar
- 1 Tbsp lemon juice
- 1 - 2 Tbsp milk

Preheat the oven to 375 deg. F Beat egg whites to stiff but moist peaks.  | |

Combine flour, baking powder, salt and spices in a large bowl. Stir well to blend. Add butter, sugar, egg yolks, milk and vanilla. Beat on low speed of mixer for 30 seconds to blend, then on medium speed until smooth, about 1 ½ minutes. Stir in raisins. Fold in egg whites.  | |

Spread batter evenly in greased 8 inch square cake pan. Bake for 30 to 35 min until cake tester comes out clean. Cool.  | |
| Frosting | |

Cream together butter, half the icing sugar and lemon juice until light (about 3 minutes). Gradually add the rest of the icing sugar and enough milk to make a smooth, spreadable consistency. Spread over the cake and then make a swirling design with your spoon.  | |
