Bring a large pot of water to boil. Drop in the peaches and leave them for 17 seconds. Plunge them into a pot with icy cold water. The skins will just slide off. |

Slice the peaches into eighths. Place in a medium sized bowl. Add the sugar and stir to dissolve the sugar. |

Leave the peaches in the bowl at room temperature and continue to stir every 5 minutes or so for about 40 minutes. A large amount of syrup will form. |

| Place a scoop of ice cream in the bottom of a serving dish. Top with the peaches and then drizzle the syrup over top. |
