| If the cream cheese is just out of the refrigerator, warm it to room temperature by heating it for a minute or 90 seconds in the microwave at 20% heat. |

Add the pimento, sweet pepper, grated onion, Worcestershire sauce, lemon juice and Tabasco to a blender or food processor. Process until smooth. |

If using a food processor, add the cheddar and cream cheese and continue to process until smooth. If using a blender, you can add the cheddar to the mixture and puree; then take the mixture out of the blender and add to a bowl containing the cream cheese. Stir until well blended. |

Place in a decorative bowl. Smooth the top. |

| Sprinkle with the parsley. Chill for several hours at least. Serve with crackers or vegetables such as celery, sliced cucumber or zucchini. |
