Sweet Potato & Pear Soup

Serves 8

Ingredients

  • 1 Tbsp butter
  • 1 Small onion (finely chopped)
  • 1/4 cup carrot (peeled & chopped)
  • 1/4 cup celery (chopped)
  • 3 Large or 2 large sweet potatoes (peeled and small dice)
  • 2 ripe pears (peeled and diced)
  • 1/2 Tsp dried thyme or 1 tbsp fresh thyme leaves
  • 1 Tsp sweet paprika
  • 5 Cups (1.25 L) chicken broth (unsalted or homemade)
  • 1 Tsp salt
  • good grinding of pepper
  • 2 Tsp maple syrup
  • 2 Tsp lime juice
  • 1/3 cup whipping cream

Directions

I like to use a mandolin (Lee Valley has a nice one) to finely chop the sweet potato, onion, carrot and celery. It just makes it easier later when you are pureeing the soup.
In a pot, heat butter on medium heat. Add onion, carrot and celery and sauté for 1 minute. Add sweet potatoes, pear and thyme and sauté for about 2 minutes. Add paprika and chicken broth. Bring to a boil and simmer for 15 minutes or until sweet potato is soft.

Puree in blender or food processor or with a hand blender until smooth. Return to pot. Add maple syrup and lime juice. Simmer for 5 minutes. Season to taste with salt and pepper adding more syrup or lime juice as needed.

To serve, fill your soup bowls and drizzle the whipped cream on in a swirling pattern.
