Clementine and Almond Salad

I love this salad.  It is so fresh tasting and the ingredients are available throughout the year.

I have made it with just the romaine and another lettuce (buttercrunch or leaf lettuce), but enjoy it just as much with Spring mix lettuces.

It tastes equally good with almonds or pine nuts.  Enjoy!

Clementine and Almond Salad

Ingredients

  • 1 can clementine or mandarin oranges or 2 fresh clementines, peeled and the sections cut in half
  • 1/4 cup toasted almonds or pine nuts (toast in dry frying pan on stove until lightly toasted)
  • 1 Bunch of romaine lettuce and 1 head of other lettuce or just use mixed greens

Optional

  • 1 - 2 Pieces prociutto (fried and crisped)

Salad dressing

  • 6 Tbsp olive oil
  • 2 Tbsp white wine vinegar
  • 1 Tbsp lemon juice
  • 1 Tbsp maple syrup or 1 tsp of sugar
  • 1/2 Tsp salt
  • 1 Tsp favourite good mustard or 1/2 tsp dry mustard
  • 1 Clove garlic, minced

Directions

Mix dressing ingredients (I usually use my Magic Bullet to blend salad dressings....easy to use and clean up)
Place other ingredients in a bowl and add toss with the dressing
