Strawberry and Radish Salad

Much to my delight, the Farmer’s Market is starting to harvest the first of it’s fresh produce for this season.  This week, there were new peas, radishes and the first picking of the strawberry crop.

I know what you are thinking….that strawberries and radishes cannot possible go together, but you would be wrong. This Strawberry and Radish Salad is a delightful combination of flavours, enhanced with the addition of avocado and  topped with a balsamic vinaigrette.

A rite of spring salad, indeed!  Enjoy!

Strawberry and Radish Salad

Serves 4

Ingredients

  • 4 Cups mixed spring greens (or 1/2 spinach, 1/2 mixed spring greens or all spinach)
  • 2 Cups fresh strawberries (sliced)
  • 1/2 bunch fresh radishes (sliced paper thin)
  • 1/2 Ripe avocado (peeled and sliced into strips)
  • freshly grated pepper

Dressing

  • 5 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1/2 Tsp salt
  • 1/2 Tbsp maple syrup
  • 1 Large clove garlic (grated)

Directions

Wash and spin dry the salad greens. You may wish to wrap them in a tea towel and chill them for about an hour to wick away any extra moisture and to crisp them up.
Mix all the ingredients for the dressing together, using a whisk or a Magic Bullet. Set aside.
Place the crisp greens in a salad bowl. Top with the strawberries, radish slices and avocado. Add freshly grated pepper to taste.

Drizzle the dressing over top and gently toss.
