Two Pear Salad

What luck….I happened to have a ripe avocado and a ripe Bartlett pear at the same time. Together with a lemon vinaigrette they make a Two Pear Salad.

An avocado comes from the tropical avocado tree, but as the fruit is pear shaped, it is sometimes referred to as an avocado pear.

Lemon and garlic combined with the two pears and cheese makes for a lovely combination.

Two Pear Salad

Serves 4

Ingredients

  • 4 - 6 Cups mixture of spinach and spring greens (or just spinach, arugula, spring greens)
  • 1 Large just ripe Bartlett or other sweet pear
  • 1 Medium to large ripe avocado
  • 2 Tbsp toasted sesame seeds
  • 1/4 cup grated Asiago cheese

Vinaigrette

  • 5 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1/4 Tsp salt
  • 1 Small clove garlic (peeled and grated or minced)
  • 1/2 Tsp dried thyme
  • freshly ground pepper

Directions

Vinaigrette
Place the olive oil, lemon juice, salt, pepper, and thyme in a blender or "Magic Bullet'. Pulse until well combined.
Place the sesame seeds in a small skillet over a high heat. Cook for a few minutes, while shaking or stirring the seeds until they are lightly toasted. Set aside.
Wash and spin dry your greens and place in a large salad bowl. Peel the avocado, remove the pit and dice into large chunks. Add to the greens. Peel, core and dice the Bartlett or other sweet pear and add to the greens. Add the toasted sesame seeds and grated Asiago cheese.
Two Pear Salad
Drizzle the dressing over the salad and gently toss (so as not to mush the avocado). Serve immediately.
