There is fresh basil growing in my garden and fresh radishes at the market. The watermelon is still coming from the States, but Watermelon and Radish Salad is something I like to enjoy all summer long. I switch over to our fresh melons, when they come into season.
To the watermelon and radish combination, you add crumble Feta and a Lemon Basil Vinaigrette.
It is a great luncheon salad or a dinner salad with grilled salmon, chicken or beef.

Watermelon and Radish Salad
Ingredients
- 4 or 5 radishes (very thinly sliced)
- 1 cup seedless watermelon (cut into 1 inch chunks)
- crumbled Feta cheese
- baby greens or lettuce (to line the serving platter)
Lemon Basil Vinaigrette
- 6 Tbsp olive oil
- 2 Tbsp lemon juice
- 3 or 4 fresh basil leaves (chopped)
- 1 clove garlic (minced or grated)
- 1/2 Tsp salt
- freshly ground pepper
