Watermelon and Radish Salad – A Dynamic Duo!

Watermelon and Radish Salad

There is fresh basil growing in my garden and fresh radishes at the market.  The watermelon is still coming from the States, but Watermelon and Radish Salad is something I like to enjoy all summer long.  I switch over to our fresh melons, when they come into season.

To the watermelon and radish combination, you add crumble Feta and a Lemon Basil Vinaigrette.

It is a great luncheon salad or a dinner salad with grilled salmon, chicken or beef.

Very Yummy!

Watermelon and Radish Salad

Ingredients

  • 4 or 5 radishes (very thinly sliced)
  • 1 cup seedless watermelon (cut into 1 inch chunks)
  • crumbled Feta cheese
  • baby greens or lettuce (to line the serving platter)

Lemon Basil Vinaigrette

  • 6 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 3 or 4 fresh basil leaves (chopped)
  • 1 clove garlic (minced or grated)
  • 1/2 Tsp salt
  • freshly ground pepper

Directions

Line a serving dish (I use a long rectangular sandwich platter) with baby greens and the add the radish slices and watermelon (mix them slightly for a better presentation). Crumble Feta over top.
Lemon Basil Vinaigrette
Measure all the ingredients in a Magic Bullet or small hand blender. Whir until just mixed. Drizzle the dressing over the salad and serve.

Out of Watermelon?
If watermelon is not available, a nice change is to substitute 1 cup of blueberries
