So, I am sure you are wondering about the funny symbol in middle of my soup picture. Yesterday, March 14th was Pi Day and with an undergraduate degree in mathematics, I just had to celebrate it in my cooking. So, the soup had the letter Pi in whipping cream in the middle of it.

The Sweet Potato & Pear Soup is quite easy to make, but with a hearty bread could easily be a main course soup. Somehow, the sweet potato, pear, carrots, lime and maple syrup combine to make the most luscious of flavours. It sits well on the tongue and makes you crave more.

Sweet Potato & Pear Soup

Ingredients
- 1 Tbsp butter
- 1 Small white or red onion (chopped)
- 1 Medium to large carrot chopped (about 1/4 cup)
- 1/4 cup chopped celery
- 3 Large sweet potatoes (peeled and diced)
- 2 Large pears (peeled, cored and diced)
- 1/2 Tsp dried thyme or 1/2 tbsp fresh thyme leaves
- 1 Tsp paprika
- 4 Cups unsalted chicken broth
- 1 1/2 Tsp salt
- 1 cup water
- 1/3 cup whipping cream
- 2 Tsp maple syrup
- 3 Tsp lime juice
- good grinding of freshly ground pepper
