Cranberry Coffee Cake

According to General Mills, Bisquick is one of General Mills’ most enduring favorites among consumers.  Developed in 1930,  Bisquick, a convenience baking mix, remains a household word. It has been used by cooks to make an ever-changing and growing variety of delicious foods.

Cranberry Coffee Cake is an easily made using Bisquick Baking Mix and Cranberry Sauce (see my post “Pass the Cranberry Sauce please”).

This coffee cake takes less than 40 minutes to prepare and bake…..very yummy!

Cranberry Coffee Cake

Ingredients

  • 1/4 cup brown sugar
  • 1/2 Tsp ground cinnamon
  • 2 Tbsp white sugar
  • 2/3 cups milk
  • 2 Cups Bisquick baking mix
  • 1 Large egg
  • 2/3 cups cranberry sauce (see my Post)

Glaze

  • 3/4 cups icing sugar
  • enough boiling water to make a spreading consistency.

Directions

Grease and 8 x 8 x 2 inch glass baking pan. Mix the brown sugar and cinnamon in a small bowl.
Combine the Bisquick, white sugar, egg and milk. Beat vigorously with a fork for 30 seconds. Spread in the prepared pan.

Sprinkle with the cinnamon and sugar mixture.

Spoon the cranberry sauce over the top.

Preheat the oven to 375 deg F. Bake 25 - 30 minutes until golden or until cake tester comes out clean.

Glaze
Measure out the icing sugar. Very slowly, add boiling water a tablespoon at a time, until the glaze is just liquid.

Drizzle on the coffee cake while it is still warm.
