Sweet Potato Rounds

Cinnamon and cayenne pepper seem unlikely companions, but work really well when working with sweet potatoes.

Sweet Potato Rounds are coated with an olive oil, cinnamon and cayenne pepper mixture and then grilled on a griddle or in a frying pan or on the barbecue.

I served them with sirloin steaks that had been cooked over charcoal….an amazing side dish that worked very well.

Sweet Potato Rounds

Serves 4 - 5 servings

Ingredients

  • 2 Medium to large sweet potatoes
  • 2 Tbsp olive oil
  • 1/4 Tsp cinnamon
  • 1/4 Tsp cayenne pepper

Directions

Wash the sweet potato and then cut into slices that are about 1/2 inch thick.
Mix the olive oil, cayenne and cinnamon together with a fork.

Using a pastry brush, coat all sides of the sweet potato with the oil mixture. Grill on a griddle (or frying pan).

Keep turning the sweet potatoes until they are nicely browned and cooked through (about 15 minutes)
