The other night, we were at the end of a week’s vacation at the cottage and our bread supply was diminished.  I had made several things during the week that required sun dried tomatoes, kalamata olives and had an open container of Feta cheese. 

The perfect solution?  Olive Cheese Bread.  Olive Cheese Bread is a serious bread, flavoured with kalamata olives, feta cheese and sun dried tomatoes.

The result was, the leftover ingredients were used up and we had fresh and tasty bread for that night’s dinner and the next day’s sandwiches.

Olive Cheese Bread

Serves makes a 1 pound loaf

Ingredients

  • 2/3 cups water
  • 2 Tbsp olive oil
  • 1 Tbsp white sugar
  • 1/2 Tsp dried thyme
  • 1 Tsp salt
  • 2 Cups all purpose flour (or bread flour)
  • 1 1/2 Tsp bread machine yeast

Additions after first kneading

  • 1/3 cup crumbled Feta cheese
  • 1/4 cup chopped pitted Kalamata olives
  • 2 Tbsp chopped sun dried tomatoes
  • 2 Tbsp all purpose flour (or bread flour)

Directions

Put the water, olive oil, sugar, dried thyme, salt, flour and yeast in the bread pan of a bread machine. Set it for white bread, medium crust. Press Start.
After First Kneading
Toss the Feta cheese, kalamata olives and sun dried tomatoes with the 2 tbsp of flour. Add them to the dough after the first kneading. The bread is baked, when the beeper beeps
