Blueberry Crisp

Serves 5 - 6

Ingredients

  • 4 Cups blueberries (farmed or wild or fresh or frozen or a combination)
  • 1 Tbsp all purpose flour
  • 1 Tsp cinnamon
  • 1 Tsp grated lemon rind
  • 1 Tbsp maple syrup or 1 tsp of white sugar
  • 1/3 cup soft butter
  • 2/3 cups brown sugar
  • 2/3 cups flour

Optional

  • 1/3 cup chopped almonds

Directions

Preheat the oven to 350 deg F.
Mix the berries, lemon rind, cinnamon and flour together in a bowl. Put this mixture in a greased 8" square Pyrex glass baking dish. Drizzle the maple syrup over the berry mixture.
Mix the softened butter, flour and brown sugar together until crumbly. Gently add the chopped almonds (if you are using them). Spread this mixture evenly over the berry mixture.

Bake about 40 minutes, until the topping is golden and the berry mixture is bubbly. Serve warm or cold with or without ice cream.
