Chocolate Drops

December 1st heralds the start of my Christmas baking each year.  I like to start with the cookies that keep well.

Chocolate Drops are one of the simplest cookies to make.  Even the youngest cook can be successful with them.  They are cooked on the stove top and then dropped onto parchment paper to cool.

Chocolate Drops contain no flour, so they can be served to your guests who are on gluten free diets.

Chocolate Drops

Serves approx 4 dozen

Ingredients

  • 2 Cups white sugar
  • 6 Tbsp cocoa powder
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/2 Tsp vanilla extract
  • 3 Cups rolled oats
  • 1 cup sweetened medium dessicated coconut

Directions

Combine sugar and cocoa in a saucepan
Chocolate Drops - mix the sugar and cocoa powder
Add butter and milk and bring to rolling boil. Cook 1 minute. Remove from the heat and add the vanilla.
Chocolate Drops - boil the chocolate mixture
Blend in oats and coconut.
Chocolate Drops - add oats and coconut
Drop by spoonfuls (use 1 teaspoon to scoop and one to drop because the mixture is very warm) onto waxed paper or parchment paper.
Chocolate Drops - cool on parchment paper
When cool, place in an airtight cookie tin and store in the refrigerator. Serve at room temperature.
