Special K Cookies

So, who knew that cereal could be made into such yummy cookies?

Special K Cookies are a drop style cookie recipe that is quick to make.  The combination of the coconut, raisins, chocolate chips and Special K is wonderful. 

Serve the with a cup of coffee or tea or a glass of milk.

Sometimes I make this into a cookie pizza.   Cut up maraschino cherries for pepperoni.  Melt dark and white chocolate and drizzle on top.  The white chocolate looks like cheese. 

Special K Cookies

Serves 48 cookies

Ingredients

  • 2 Large eggs
  • 1 cup soft butter
  • 2 Cups brown sugar
  • 1 Tsp vanilla extract
  • 2 Cups all purpose flour
  • 1 Tsp baking powder
  • 1 Tsp baking soda
  • 1/2 Tsp salt
  • 1 cup coconut
  • 1/2 cup raisins
  • 1/2 cup chocolate chips
  • 4 Cups original Special K cereal

Directions

Preheat the oven to 350 deg F. Cream eggs, butter, sugar and vanilla. Then add the flour, baking powder, baking soda, salt, coconut, raisins and chocolate chips to the egg/butter mixture, stirring well. Then fold in the Special K cereal. It will be sort of a dry batter.

Drop by spoonfuls on ungreased cookie sheets. Press down with fork or your finger. Bake 10 - 12 minutes or until lightly golden. Cool on parchment paper. Store in a cookie tin or jar at room temperature.

Cookie Pizza Variation
This recipe can also be made into a cookie pizza. Pat cookie dough into a round pizza pan. Leave about ¾ inch in from edge to allow for expansion. Cut up maraschino cherries for pepperoni. Melt dark and white chocolate and drizzle on top. The white chocolate looks like cheese. Bake until golden brown. Cut as you would a pizza, into wedges.
