Brie is such a versatile cheese for appetizers. You can bake it in puff pastry, bake it in the oven with various toppings, split it in half and stuff it with a filling or in this case marinate it and then barbecue it.
Barbecued Marinated Brie is a nice combination of lemon, garlic, mustard and sweet pepper. What a treat to be able to barbecue the brie, instead of heating up the oven on a warm summer’s evening.
I love to serve this with fresh sliced pears, along with thinly sliced baguette or plain crackers.

- 1 250 gm (8 oz) round Brie
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- 1/2 red or yellow sweet pepper (finely chopped)
- 1 Tbsp fresh parsley (finely chopped)
- 1 clove garlic (grated or minced)
- 1 Tsp Dijon or your favourite good mustard
- 1/4 Tsp freshly grated black pepper
