White Chocolate Chip Cookies for a Winter’s Day

Chocolate Chip cookies have always been one of my favourites, but these are made with white chocolate chips and I think they are even more delicious than the traditional ones.

The addition of the cranberries makes them pretty to look at and adds a nice flavour to them.

 

White Chocolate Chip Cookies

Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 Tsp vanilla
  • 1 1/2 Cups all purpose flour
  • 1/2 Tsp baking soda
  • 1/4 Tsp salt
  • 1 1/2 Cups white chocolate chips
  • 1 Cup dried cranberries

Directions

Preheat oven to 350 deg F.

In large bowl, using electric mixer on medium speed, beat butter and two sugars. Add egg and vanilla; beat until fluffy.

Measure flour, baking soda and salt in a bowl and mix together. Gradually beat into butter mixture on low speed of mixture or by hand until just mixed. Stir in chocolate chips and cranberries.


Drop by rounded teaspoonfuls, 2 inches apart on ungreased cookie sheets. Bake 10 to 12 minutes,or until edges start to brown. Let rest about a minute and then lift them to parchment paper and cool completely.
