Always a hit with young and old, No-Bake Yule Log is an easy to make holiday dessert.
Chocolate wafer cookies and whipped cream are combined in a creative way to make a No-Bake Yule Log.
Cut into diagonal slices to serve
The key to this recipe is that it needs enough time for the chocolate wafer cookies to absorb some of the moisture from the whipped cream. This transforms them from a thin crisp cookie to cake.
No-Bake Yule Log
Ingredients
- 1 Pkg (200 g) chocolate wafer cookies (about 36 cookies)
- 2 Cups whipping cream
- 2 Tsp white sugar
- 1 Tsp vanilla extract
- 1/2 Square (oz) bittersweet or semi sweet cooking chocolate

Note
To make the whipping cream incorporate more air and whip faster, use chilled whipping cream and place the beaters and bowl in the fridge or freezer for about 10 minutes before using them.

Whip the cream until it is just starting to form soft peaks. Add the sugar and vanilla and continue to whip until it is just started to form stiff peaks. |

Use a sandwich tray or any elongated serving dish to make your yule log. The chocolate wafers should be thin and crisp. |

Spread each wafer with about some of the whipped cream and start to join them together. The end result will look like a branched tree limb. When you start to make the branch, you will need to angle cookies. |

Cover the basic branch all over with whipped cream, making a rough finish (like the appearance of bark). If there is some whipped cream that has spilled out from the limb, clean the plate with a clean cloth and then wipe the final bits away using a Q-tip. |

Use a knife to thinly pare through the cooking chocolate so that you have pieces of chocolate of various sizes. This will better simulate bark. |

Optionally you can decorate with hardened royal icing shapes or use cut glace cherries. The cake needs to be refrigerated at least 4 hours so that the cookies will absorb some of the moisture and become more cake like. If it will be refrigerated more than 4 hours, loosely cover with plastic wrap. |
