Lumberjack Cake is an old fashioned apple and date cake with a broiled butter/coconut/brown sugar topping….great for dessert or lunch boxes.

I used to find that the hardest part of making this cake was chopping the dates.  In frustration one day, I cut the dates with scissors and have never looked back.  Scissors make chopping dates a breeze.

Ingredients

Cake

  • 1 cup peeled chopped apple
  • 1 cup dates (cut into medium sized pieces)
  • 1 Tsp baking soda
  • 1 cup boiling water
  • 1/2 cup shortening
  • 1 cup white sugar
  • 1 Large egg
  • 1 Tsp vanilla extract
  • 1 1/2 Cups all purpose flour
  • 1/2 Tsp salt

Topping

  • 4 Tbsp butter
  • 1/2 cup brown sugar
  • 4 Tbsp milk
  • 1 cup sweetened dessicated or shredded coconut

Directions

Cake
Chop the dates, by cutting them into medium sized pieces using scissors.

Combine the apple, dates, baking soda and boiling water and let cool. Cream the shortening and white sugar until fluffy. Add the egg and vanilla to the creamed shortening. Mix the flour anbd salt and alternately to the creamed mixture with the fruit mixture.

Spread into a greased 8 x 8 inch glass baking dish. Bake at 350 deg F for 50 - 55 minutes or until a cake tester inserted in the middle comes out clean.

Topping
Combine the butter, brown sugar, milk and coconut in a pan over low heat until the butter and sugar has melted. Spread over the cooked cake and then broil for a few minutes until the topping is golden.
