Sylvia's Lemon Squares

I had the pleasure of sampling these lemon squares over the years, when my friend Sylvia would bring them to our potluck committee meetings.

Sylvia’s Lemon Squares have just the right tartness contrasted by sweetness to produce a perfect lemon square.

The only problem is that when my family cuts them, they usually look like large rectangles instead of squares….very yummy.

Sylvia’s Lemon Squares

Ingredients

Base

  • 1/2 cup soft butter
  • 1/4 cup icing sugar
  • 1 cup all purpose flour

Filling

  • 2 beaten eggs
  • 2 Tbsp lemon juice
  • 1 cup white sugar
  • 1 Tsp grated lemon rind

Directions

Base
Mix all the ingredients well. Grease a 9 x 9 or 8 x 9 or 11 x 7 inch square pan. Pat the mixture into the bottom. Prick with a fork. Bake at 350 deg. F for 15 minutes.
Filling
Combine eggs, sugar, juice and rind. Mix well and pour over the top of the baked base. Return to the oven for 25 minutes.

When cool, dust with icing sugar and cut into squares.
