Seven Layer Dinner

Seven Layer Dinner is an easy to prepare entree that combines meat, vegetables and starch in one dish.

This is one dish that you can vary to suit your tastes…..convert it to Six Layer Dinner, by removing the mushroom layer.  Use fresh corn cut off the cob or fresh tomatoes when they are in season.

Prepare it the night before and then just pop it in the oven for a no fuss meal the next day (allow an extra 1/2 hour of cooking if it is right from the refrigerator). 

It is very nice served with dill pickles  or you could prepare a green salad.

Seven Layer Dinner

Serves 6

Ingredients

  • 1 Large potato (sliced into 1/4 inch slices)
  • 1 Large onion (thinly sliced)
  • 2 Large carrots (sliced into 1/4 inch slices)
  • 10 medium to large cremini mushrooms (sliced into 1/4 inch slices)
  • 1 can kernel corn (drained)
  • 1 Lb or 450 gm lean ground beef
  • 1 14 oz (398 ml) tin unsalted diced tomatoes or fresh that have been peeled and chopped
  • 1 Tsp dried oregano
  • salt and pepper to taste
  • 2 Tbsp cornstarch dissolved in 1/4 cup of water

Directions

Grease a large oven going casserole dish. Add the ingredients in the order listed. Salt and pepper each layer. A good grinding of pepper will add a little bite to the dish. Sprinkle the oregano over the beef layer, before adding the tomatoes.
Seven Layer Dinner - ready for baking
Cover and bake at 350 deg F for about 1 hour and 15 minutes. Remove the lid and drizzle the mixture of cornstarch and water along the edges, gently poking it in, without disturbing the layers. Cover and bake another 15 minutes.
